Ingredients
- 1 red onion, sliced
- 3 garlic cloves, crushed
- 8 sausages (pork, veggie, or reduced fat)
- 1 can Heinz baked beans
- 1 can plum tomatoes
- 1 can mixed beans (or butter beans or similar)
- Kale
- 2 tsp olive oil
- 1 tsp fresh or dried herbs (thyme and rosemary work well)
- 1 bay leaf (optional)
- 1 tsp Worcestershire sauce (optional)
- 1 tsp salt
- 40g parmesan (10g per serving)
Method
- Heat olive oil in a casserole pot/pan and brown the sausages for 5-10 minutes, then remove from pan.
- Add the sliced onions along with a pinch of salt to the same pan and cook until starting to soften.
- Add the garlic and tsp herbs and cook for a further minute.
- Add the baked beans, mixed beans, tin of tomatoes, tsp salt, bay leaf, and Worcestershire sauce.
- Mix through and then add the sausages back to the pan and bring to a simmer.
- Simmer for 20 minutes (10 minutes with lid on and 10 minutes with lid off).
- Add the kale and cook for a further 2 minutes or until kale has wilted.
- Serve with a sprinkle of parmesan.
