tuscan sausages, beans and kale

Ingredients

  • 1 red onion, sliced
  • 3 garlic cloves, crushed
  • 8 sausages (pork, veggie, or reduced fat)
  • 1 can Heinz baked beans
  • 1 can plum tomatoes
  • 1 can mixed beans (or butter beans or similar)
  • Kale
  • 2 tsp olive oil
  • 1 tsp fresh or dried herbs (thyme and rosemary work well)
  • 1 bay leaf (optional)
  • 1 tsp Worcestershire sauce (optional)
  • 1 tsp salt
  • 40g parmesan (10g per serving)

Method

  1. Heat olive oil in a casserole pot/pan and brown the sausages for 5-10 minutes, then remove from pan.
  2. Add the sliced onions along with a pinch of salt to the same pan and cook until starting to soften.
  3. Add the garlic and tsp herbs and cook for a further minute.
  4. Add the baked beans, mixed beans, tin of tomatoes, tsp salt, bay leaf, and Worcestershire sauce.
  5. Mix through and then add the sausages back to the pan and bring to a simmer.
  6. Simmer for 20 minutes (10 minutes with lid on and 10 minutes with lid off).
  7. Add the kale and cook for a further 2 minutes or until kale has wilted.
  8. Serve with a sprinkle of parmesan.
