tiramisu weetabix

Ingredients

  • 3 x weetabix
  • 200g high protein vanilla yoghurt or vanilla skyr yoghurt
  • 1 tsp maple syrup
  • 3 tbsp milk
  • 1 double espresso or 3 tbsp strong black instant or filter coffee
  • 0.5 tsp cocoa powder

Method

  1. Crush the weetabix into a bowl and mix with the coffee, milk and maple syrup.
  2. Layer half of it in the bottom of a jar.
  3. Next layer half the yoghurt, the other half of the weetabix, and finally the second half of the yoghurt.
  4. Top with the cocoa powder (use a small sieve or tap gently off a teaspoon).
  5. Eat straight away or refrigerate overnight.
