Ingredients
- 1/2 tin chickpeas (roasted)
- 5g parmesan
- 100g chicken breast (raw weight)
- 1 baby gem lettuce (sliced)
- Mixed leaves
- 1 slice sourdough
- 1 tsp olive oil or frylight
- Oregano
- 1 tbsp Caesar dressing
- Optional: anchovies
Method
- Preheat the oven to 180°C.
- Wrap the chicken breast in foil, season with salt and pepper, and place in the oven.
- Drain, rinse, and dry the chickpeas. Place them on a tray, spray with frylight, and season. Roast in the oven for 18-20 minutes.
- Slice the sourdough into cubes, drizzle with olive oil, season with oregano, salt, and pepper, and bake in the oven for the last 10 minutes.
- Fill a bowl with baby gem, mixed leaves, and anchovies (if using).
- Slice and add the chicken breast, top with crispy chickpeas and parmesan shavings.
- Drizzle with Caesar dressing and enjoy!
