the ultimate caesar salad

Ingredients

  • 1/2 tin chickpeas (roasted)
  • 5g parmesan
  • 100g chicken breast (raw weight)
  • 1 baby gem lettuce (sliced)
  • Mixed leaves
  • 1 slice sourdough
  • 1 tsp olive oil or frylight
  • Oregano
  • 1 tbsp Caesar dressing
  • Optional: anchovies

Method

  1. Preheat the oven to 180°C.
  2. Wrap the chicken breast in foil, season with salt and pepper, and place in the oven.
  3. Drain, rinse, and dry the chickpeas. Place them on a tray, spray with frylight, and season. Roast in the oven for 18-20 minutes.
  4. Slice the sourdough into cubes, drizzle with olive oil, season with oregano, salt, and pepper, and bake in the oven for the last 10 minutes.
  5. Fill a bowl with baby gem, mixed leaves, and anchovies (if using).
  6. Slice and add the chicken breast, top with crispy chickpeas and parmesan shavings.
  7. Drizzle with Caesar dressing and enjoy!
