Ingredients
- 1 slice sourdough
- 1/2 medium avocado
- 50g skyr yoghurt
- Lemon zest
- Sprinkle of cayenne (or smoked paprika)
- Sprinkle of chilli flakes
- Small handful pea shoots or rocket/watercress
- Salt and pepper
Method
- In a bowl, mash the avocado with a fork and add the yoghurt, cayenne pepper, chilli flakes, lemon zest and season well with salt and pepper.
- Put the toast on.
- Once toasted, spread the avocado yoghurt on top and finish with the smoked salmon, pea shoots, and a little extra lemon, chilli, and black pepper.
