smoked salmon and avo yoghurt on toast

Ingredients

  • 1 slice sourdough
  • 1/2 medium avocado
  • 50g skyr yoghurt
  • Lemon zest
  • Sprinkle of cayenne (or smoked paprika)
  • Sprinkle of chilli flakes
  • Small handful pea shoots or rocket/watercress
  • Salt and pepper

Method

  1. In a bowl, mash the avocado with a fork and add the yoghurt, cayenne pepper, chilli flakes, lemon zest and season well with salt and pepper.
  2. Put the toast on.
  3. Once toasted, spread the avocado yoghurt on top and finish with the smoked salmon, pea shoots, and a little extra lemon, chilli, and black pepper.
