protein pancakes

Ingredients

  • 30g rolled oats
  • 25g protein powder (vanilla or white chocolate)
  • 1 tsp baking powder
  • 1/2 banana
  • 1 egg
  • 30ml milk of choice

Method

  1. Finely blitz up the oats.
  2. To a large bowl, add the blitzed oats, protein powder, and baking powder and mix.
  3. Mash your banana in a separate bowl and add the egg and milk, then whisk until smooth.
  4. Make a well in the center of your dry ingredients and slowly add the wet mix, whisking everything together until smooth.
  5. Add a ladle of your mixture at a time to a non-stick pan.
  6. When the mixture starts to bubble, flip the pancake over and cook on the other side until golden.
  7. Top with some fruit, seeds, honey, or yogurt (or all of the above!).
