Ingredients
- 4 portobello or large flat mushrooms
- 150g passata
- 1 tsp sugar
- 1 tsp dried oregano
- Handful fresh basil
- 1 tsp olive oil
- 1/2 ball mozzarella
- 40g cheddar cheese
- 1 garlic clove, crushed
- 4 cherry tomatoes
- Optional: ham or cooked chicken for additional protein
Method
- Preheat the oven to 180 degrees Celsius.
- Mix the passata with the crushed garlic, sugar, oregano, chopped fresh basil, salt, and pepper and set aside.
- Heat the oil in a large frying pan (use an oven-proof one if you have one).
- Remove the stalks from the mushrooms and fry for 2 minutes on each side.
- Top the mushrooms with a spoonful of the passata and evenly distribute the cheeses between the mushrooms.
- Top with sliced cherry tomatoes and a little sprinkling of oregano.
- Add any other toppings at this point too (if using harder vegetables, pre-cook them).
- Pop the mushroom pizzas into the oven for 10-15 minutes until mushrooms are cooked and cheese is melted.
- You can serve with potatoes, vegetables, salad, or couscous.
