lettuce burrito bowls

Ingredients

  • 250g lean beef mince
  • 60g light crème fraîche
  • 2 tsp chipotle paste
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 red pepper finely sliced
  • 1 red onion (3/4 diced and 1/4 finely diced)
  • 100g cherry tomatoes finely diced
  • Fresh coriander, chopped
  • Squeeze of lime
  • 1/2 avocado sliced
  • 25g reduced fat cheddar, grated
  • 2 spring onions sliced
  • 1 tsp olive oil
  • Lettuce such as romaine, cos, or iceberg

Method

  1. Heat the tsp olive oil in a pan and fry 3/4 of the diced onion until soft.
  2. Add the mince and the red pepper and cook on a medium heat until mince is brown all over.
  3. Add the spices/seasoning, 1 tsp of the chipotle paste and a splash of water and cook for 10 mins on a low-medium heat.
  4. Meanwhile, put the remaining 1/4 finely diced red onion in a bowl with the diced tomato, some of the fresh coriander to taste, squeeze of lime and some salt and pepper. Mix and set aside.
  5. Mix the remaining tsp of chipotle paste and the crème fraîche together and set aside.
  6. Grate the cheese.
  7. Slice the avocado and the spring onion.
  8. Peel the leaves off the lettuce of your choice making sure they stay in a cup shape.
  9. Fill the lettuce with the mince, tomato salsa, avocado and spring onion and top with a good drizzle of the chipotle crème fraîche and some more fresh coriander.
