high protein french toast

Ingredients

  • 1 bagel (use sliced bread for less calories)
  • 1 egg
  • 1 egg white
  • 1 tbsp milk
  • 10g butter
  • 2 smoked bacon medallions
  • 50g high protein vanilla yoghurt or vanilla skyr
  • 1/2 small banana
  • 10ml maple syrup
  • Cinnamon

Method

  1. Pop the bacon onto an oven tray and grill until cooked.
  2. In a flattish dish, whisk together the egg, egg white, milk, and a sprinkle of cinnamon.
  3. Slice the bagel in half and place it into the egg mixture to soak.
  4. Add the butter to a hot pan and once foaming, add the soaked bagel.
  5. Cook for 2-3 minutes on each side or until golden brown.
  6. Top with yoghurt, bacon, banana, maple syrup, and a sprinkle of cinnamon.
