Ingredients
- 1 bagel (use sliced bread for less calories)
- 1 egg
- 1 egg white
- 1 tbsp milk
- 10g butter
- 2 smoked bacon medallions
- 50g high protein vanilla yoghurt or vanilla skyr
- 1/2 small banana
- 10ml maple syrup
- Cinnamon
Method
- Pop the bacon onto an oven tray and grill until cooked.
- In a flattish dish, whisk together the egg, egg white, milk, and a sprinkle of cinnamon.
- Slice the bagel in half and place it into the egg mixture to soak.
- Add the butter to a hot pan and once foaming, add the soaked bagel.
- Cook for 2-3 minutes on each side or until golden brown.
- Top with yoghurt, bacon, banana, maple syrup, and a sprinkle of cinnamon.
