Ingredients
- 2 brioche buns
- 2 chicken breasts (approx. 200g each)
- 40g tikka masala paste
- 100g skyr yogurt
- 100g cucumber
- ½ tsp garlic granules
- ½ tsp sugar
- 1 tbsp chopped herbs (coriander, mint, parsley)
- squeeze of lemon or lime (optional)
- 2 tbsp mango chutney
- 2 poppadum
- ¼ red onion (optional)
- lettuce
Method
- Preheat the oven to 200 degrees Celsius.
- Butterfly the chicken breasts and marinate in the tikka paste and 50g of the yogurt. Leave for 20-30 mins.
- Once marinated, place them in the oven on a greaseproof lined baking tray for 20 mins, turning halfway.
- Meanwhile, make your raita. Grate the cucumber and squeeze out as much of the water as possible. Place in a bowl and mix with the remaining yogurt, garlic granules, sugar, salt, pepper, squeeze of lemon or lime and herbs of choice.
- Slice the red onion into thin rings and set aside.
- Once your chicken is ready, toast your buns and spread a healthy layer of the raita on the bottom bun and a tbsp mango chutney on the top bun.
- Build your burger with the chicken, red onion, lettuce and finish it off with a crushed poppadum.
- Pop the lid on, tuck in!
