Ingredients
- 350g chicken breast, sliced into chunks
- 300g white potatoes, cut into chips
- 2 tsp smoked paprika
- 2 tsp cumin
- 2 tsp dried oregano
- 100g cucumber
- 150g skyr yogurt
- 2 crushed garlic cloves or garlic salt
- 1 red pepper, cut into large chunks
- 2 flatbreads (approx 200 cals each)
- tsp sriracha or similar
- squeeze of lemon
Method
- Preheat oven to 200 degrees.
- Marinate chicken in 50g yogurt, 1 tsp smoked paprika, 1 tsp cumin, 1 tsp oregano, salt, and pepper, and set aside.
- Coat your homemade chips in fry light, 1 tsp paprika, 1 tsp cumin, 1 tsp oregano, salt, and pop onto an oven tray with the chopped red pepper.
- Put chips into the oven for 20 minutes.
- Meanwhile, make the tzatziki. Grate the cucumber into a bowl and squeeze out all the water. Return to the bowl and add the remainder of the yogurt (100g), pinch of salt, squeeze of lemon, and 1 crushed garlic clove or a good pinch of garlic salt.
- Once 20 minutes is up, add the chicken to the oven with the second garlic clove and cook for a further 15 minutes.
- Sprinkle some water onto the flatbreads and add to the oven for the final 3 minutes.
- Assemble the flatbreads with tzatziki, chicken, pepper, chips, sriracha, and salad.
- Add halloumi if you are using it and add the relevant macros.
