chicken gyros

Ingredients

  • 350g chicken breast, sliced into chunks
  • 300g white potatoes, cut into chips
  • 2 tsp smoked paprika
  • 2 tsp cumin
  • 2 tsp dried oregano
  • 100g cucumber
  • 150g skyr yogurt
  • 2 crushed garlic cloves or garlic salt
  • 1 red pepper, cut into large chunks
  • 2 flatbreads (approx 200 cals each)
  • tsp sriracha or similar
  • squeeze of lemon

Method

  1. Preheat oven to 200 degrees.
  2. Marinate chicken in 50g yogurt, 1 tsp smoked paprika, 1 tsp cumin, 1 tsp oregano, salt, and pepper, and set aside.
  3. Coat your homemade chips in fry light, 1 tsp paprika, 1 tsp cumin, 1 tsp oregano, salt, and pop onto an oven tray with the chopped red pepper.
  4. Put chips into the oven for 20 minutes.
  5. Meanwhile, make the tzatziki. Grate the cucumber into a bowl and squeeze out all the water. Return to the bowl and add the remainder of the yogurt (100g), pinch of salt, squeeze of lemon, and 1 crushed garlic clove or a good pinch of garlic salt.
  6. Once 20 minutes is up, add the chicken to the oven with the second garlic clove and cook for a further 15 minutes.
  7. Sprinkle some water onto the flatbreads and add to the oven for the final 3 minutes.
  8. Assemble the flatbreads with tzatziki, chicken, pepper, chips, sriracha, and salad.
  9. Add halloumi if you are using it and add the relevant macros.
