Ingredients
- 2 chicken breasts (approx. 300g)
- 2 eggs
- 2 rashers smoked back bacon
- 40g light mayonnaise
- 1 anchovy fillet
- 1 small garlic clove (or ½ a large one) grated
- 20g parmesan cheese grated
- ½ tsp white wine vinegar
- squeeze of lemon
- 2 tsp olive oil
- 2 brioche burger buns
- 4 leaves of baby gem lettuce or similar
- Sliced gherkins - optional
Method
- Start by making the Caesar sauce. Mash the anchovy fillet in a small bowl until it breaks down.
- To the same bowl, add the mayonnaise, grated garlic, half the parmesan, white wine vinegar and a squeeze of lemon. Mix well. You may need to loosen slightly with a dash of water!
- Preheat the oven to 180 degrees Celsius. Butterfly the chicken breasts and season all over with salt and pepper.
- Heat 1 tsp of olive oil in a pan (use one that can go in an oven to save on dishes!). Once hot, add the butterflied chicken and cook for 2 minutes on each side until it has some colour.
- Transfer the chicken to the oven and set a timer for 5 minutes. Once 5 minutes is up, add the bacon to the same pan (or tray if you’ve had to transfer) and cook for a further 10 minutes, flipping the bacon halfway through.
- Heat the remaining tsp of olive oil and fry your eggs - runny yolks all the way!
- Toast your bun in the frying pan with the eggs, or in the toaster and then it’s time to build your burger - Caesar dressing, lettuce, chicken, gherkins (if using) bacon, egg and top with black pepper and the remaining grated parmesan.
- Cut in half, or don’t, and tuck in!
