babybel burgers

Ingredients
- 250g lean beef mince (5% fat)
- 2 light babybel
- 1/2 tbsp ketchup
- pinch of oregano
- 1/2 tsp garlic granules
- 2 brioche buns
- 60g (4 slices) beef tomato
- A few slices of white onion
- 50g baby gem lettuce
- 1 tbsp light mayonnaise
- 1/2 tsp chipotle paste
- Fry light
Method
- Preheat the oven to 180 degrees Celsius.
- Mix the mince, ketchup, oregano, garlic granules, salt and pepper together and squish well with your hands.
- Separate into 2 portions and wrap each portion around a babybel. Make sure it is nice and compact.
- Pop into the fridge for 20 minutes to set.
- Meanwhile, slice the tomato and onion and tear up the lettuce and set aside.
- Mix the chipotle paste with the mayonnaise.
- Once 20 minutes is up, heat the fry light in a frying pan until very hot and sear the burgers for 2 minutes on each side being careful not to burn them.
- Transfer to the oven for 10 more minutes or until cooked. A little pink is fine if you like them medium rare.
- 2 minutes before the burgers are ready, lightly toast your burger buns in the oven or in the toaster and spread on the chipotle mayo.
- Add your tomato, onion and lettuce.
- Top with the cooked burgers and the bun lid.
