babybel burgers

Ingredients

  • 250g lean beef mince (5% fat)
  • 2 light babybel
  • 1/2 tbsp ketchup
  • pinch of oregano
  • 1/2 tsp garlic granules
  • 2 brioche buns
  • 60g (4 slices) beef tomato
  • A few slices of white onion
  • 50g baby gem lettuce
  • 1 tbsp light mayonnaise
  • 1/2 tsp chipotle paste
  • Fry light

Method

  1. Preheat the oven to 180 degrees Celsius.
  2. Mix the mince, ketchup, oregano, garlic granules, salt and pepper together and squish well with your hands.
  3. Separate into 2 portions and wrap each portion around a babybel. Make sure it is nice and compact.
  4. Pop into the fridge for 20 minutes to set.
  5. Meanwhile, slice the tomato and onion and tear up the lettuce and set aside.
  6. Mix the chipotle paste with the mayonnaise.
  7. Once 20 minutes is up, heat the fry light in a frying pan until very hot and sear the burgers for 2 minutes on each side being careful not to burn them.
  8. Transfer to the oven for 10 more minutes or until cooked. A little pink is fine if you like them medium rare.
  9. 2 minutes before the burgers are ready, lightly toast your burger buns in the oven or in the toaster and spread on the chipotle mayo.
  10. Add your tomato, onion and lettuce.
  11. Top with the cooked burgers and the bun lid.
